Oatmeal Apple Crisp


Okay... first post!  This is a recipe I've adapted from my husband's repertoire.  We recently picked TONS of apples and despite being the end of "apple picking season", we found some really great suncrisp apples (developed by Rutgers University... oh useless trivia).  This is a reallllly easy recipe.  I did increase the temperature in the recipe (I only used 350 degrees... I think it would have been better at 375... please watch carefully!


Oatmeal Apple Crisp
Ingredients:
8-10 peeled, cored, and cut apples
1 cup all purpose flour
1 cup brown sugar
1 stick butter
cinnamon
1/2 cup oatmeal

Instructions:
Peel and core apples (I am IN LOVE with our new apple corer).  Preheat oven to 375º.  Cut apple slices in half.  In a mixing bowl, combine flour, brown sugar, and oatmeal.  Work the butter in with a dough blender or fork until you have firm, yummy crumb topping.  Place apples in a baking dish (any will do... just be sure it is deep enough to contain a good layer of apples and crumb), sprinkle cinnamon on top, and pour crumb over the apples.  Bake for 30-35 minutes or until browned and crispy on top.  Apples should be a little sizzly.  Enjoy!
